Meal Prep With Me! Healthy Family Meal Prep for the Week

hey guys it's Tasha from one big happy life welcome to another weekly family meal prep video where I share the exact recipes tips and strategies that I use to meal prep healthy delicious meals for my family throughout the week this week I am making copycat Chipotle barbacoa burrito bowls veggie spaghetti and meat sauce and ground turkey tacos with veggie taco soup I shared the grocery haul for this meal prep earlier this week so be sure to check that out to see what I bought and how much it all cost I start out by cutting five pounds of I of round roast into three inch cubes this five pounds of meat will make 20 or so servings I add two tablespoons of oil to the pan and brown the meat on medium-high heat if I'm in a hurry sometimes I skip this step but it does add a little something to the flavor while the meat is browning I make the marinade 2 cups of water 1 cup of onions 2 limes or just the juice 2 tablespoons of cumin 2 tablespoons of oregano 1 teaspoon of ground cloves 1 tablespoon of kosher salt next I add 2 tablespoons of garlic and 2 to 4 chipotle peppers and adobo sauce and blend it all up in my Vitamix I have the browned meat to the slow cooker with three bay leaves and the marinade cover and cook on low for seven hours once the meat is done I take it out of the pot and shred it then I added back to the sauce and give it a good stir so that the meat can soak up even more of the sauce now keep in mind that I have round roast doesn't have as much fat and so ends up being a bit drier than a fattier cut of meat so having that extra sauce really does add to the flavor you can't have a proper copycat barbacoa bowl without also making some cilantro lime rice as usual I cook my brown rice in the instant pot you want to use two cups of liquid for every one cup of rice here I'm using five cups of rice so I add 10 cups of water then I pressure cook that on low for 18 minutes when the rice is done I dump it into a large bowl to cool next I squeeze the juice from three limes half a lime per cup of dry rice and add three tablespoons of vegetable oil and whisk that all together now that my rice has pulled some I add one cup of fresh chopped cilantro and the oil and lime juice mix and give it a good stir to make the bowls I add half a cup of rice 1/2 a cup of barbacoa 1/4 cup of black beans and a quarter cup of pre-made organic Pico next up I'm going to make the veggie spaghetti and tacos I like to hide veggies in my spaghetti to bump up the nutritional value today I'm adding shredded zucchini which I shred using the food processor I put two pots on the stove to cook the 6 pounds of ground turkey one pot will make taco meat and the other will make veggie spaghetti after I browned the meat I add 1 cup of onions to each pan then I add 3 tablespoons of taco seasoning and a cup of water to the pan on the right and give that a stir for the pan on the Left I add the shredded zucchini a tablespoon of brown sugar a tablespoon of kosher salt 2 teaspoons of black pepper 2 teaspoons of ground sage 2 teaspoons of ground thyme 1 teaspoon of marjoram one teaspoon of red pepper flakes one tablespoon of garlic powder next I add 2 cans of diced tomatoes and blend a third can into soft at this point I take the taco meat off because it's done I let the spaghetti sauce simmer for about thirty minutes meanwhile I bring water to boil for the spaghetti this week I'm making a mix of whole wheat and veggie spaghetti they have different cooking time so I put one end before the other technically that's not really enough water to cook two packages of spaghetti but honestly I really can't tell the difference when I do this this batch of spaghetti made enough for 12 adult lunch portions for toddler portions and a full dinner serving for the family I also had enough extra zucchini left over to make a whole some whole-wheat zucchini bread which I slice and store it in the freezer for snacks each one of these meals is absolutely delicious we will supplement these meals with lots of vegetable sides and snacks like garden salads veggie taco soup and raw vegetable snaps with zucchini hummus during the week we use the taco meat for taco night which you can watch us make in our family nighttime routine video I hope you enjoyed this meal prep and remember to thumbs up and subscribe for more one big happy life


  1. What a fantastic video. I found it challenging to find healthy meal prep videos that were for families and include dinner. Most were fir a single person or couple. If they were family they were usually snacks and lunches. Dinners should have a little more involvement and I was sick of seeing veggie bowls. Please can you do a weekly meal prep video!? I am sure tons of people would love that. We ALL struggle with making time for cooking.
