Healthy Taco Casserole Recipe – HASfit Healthy Mexican Recipes – Healthy Dinner Recipe

hi and welcome to clean eating with Claudia and Hospice we're in the kitchen because today I'm going to show you how to maintain super simple and super delicious recipe that your entire family will love today we're going to be making a taco casserole don't worry about writing on any of the directions or ingredients just be sure to click on that link that's available in the video description that goes into yashka comm where we have all the directions and ingredients ready for you let's get started okay so I have a big pan on the stove and it's at a medium-high heat so to start the casserole we're actually going to be starting with one chopped bell pepper then we're going to add in half of a small onion chopped and we're going to mix this around and we're just going to allow the bell pepper and the onions to soften we're going to take about two to three minutes so now that the bell pepper and the onion have softened is incredibly fragrant right now before we got started I actually took one count of ground beef and browned it so I'm going to be adding in the cooked ground beef into the veggies and to this I'm actually going to be adding some seasonings so we're going to add one tablespoon of chili powder one tablespoon of garlic powder and then one tablespoon of cumin so we'll add all of this together and we're going to let this sit for about another two to three minutes just to allow all the seasonings to get into the vegetables and to the meat okay so I've let the seasonings kind of marry together in the pot here for about two minutes to this I'm actually going to be adding in one 10 ounce can of diced tomatoes it's also got some green chilies in there don't drain it just let all the juices go in then we're going to be adding in 1 15 ounce can of black beans again with the juices so we'll add that in followed by 2 tablespoons of a low sodium vegetable or chicken broth whatever it is that you have on hand and we're going to mix all this together and just allow all of this to come to a nice simmer so now that I have this in one of the left ingredients I'm going to add in is about a quarter of a cup of chopped cilantro you can leave this out if you want to but this is a great herb to add just for some additional flavor so my pod has been simmering away with all of the ingredients in there and the last ingredient that we're going to add before we transfer this to a casserole dish is quinoa now if you want to just take a regular bag of brown rice like the boil-in-the-bag open it up and throw it in you can so I'm going to use about a quarter of a cup to 1/3 a cup of uncooked came off toss that in mix it into the pot and what's going to happen is that all the juice that we left in and the broth that we added it's actually going to cook the quinoa once we pop this into the oven so next step is to transfer this to a casserole dish okay so I have an 8×8 baking dish here that I've sprayed with a nonstick cooking spray and we're just going to transfer the pot in to be a biting baking dish so very carefully shake the pot and get everything transferred over and you can cut it down a little bit all four corners and you see I have cheese here now this is completely optional but it does make for a great topic to your casserole I'm gonna take about a quarter of a cup to half a cup of a shredded cheese and just sprinkle it right on top of your casserole and once we do this I'm actually going to cover it with foil and my oven has been preheating at 350 degrees and we're going to pop this in there for 15 minutes once 15 minutes is up I'm going to remove the foil and let it bake for an additional 10 minutes just to allow the cheese to get extra bubbly and we'll see the you back once is all done this recipe is great because it's high in fiber it's also got a good amount of protein plus you're also getting a good complex carbohydrates from the quinoa and the black beans if you enjoyed this recipe please be sure to check out my blog and has its website where you'll find recipes you're also going to find hundreds of free workouts male fans to lose or gain weight and are complete 30 tonight 18 fitness programs please do me a huge favor subscribe to our YouTube channel follow us on Twitter and even like us on Facebook to receive the best day and motivation you can now even download as fit interactive trainer app so you can take all of these wonderful workouts and recipes with you wherever you go this has been clean eating with Claudia and hospit and remember to eat clean and changer

  9. Brown rice definitely does not cook at all in 25 minutes in the caserole. Delicious other than that. Back in the oven it goes. Hopefully the rice eventually cooks….

  16. what I will do is add the addition of toasted tortillas before laying the meat mixture so it gives a bit of a crunch and to really make it more authentic.
