EASY MEAL PREP WITH ME! | Healthy Meal Prep for Summer



hey health nuts welcome back to my channel today we're doing another meal pot video as you can see I have all these delicious foods laid out in front of me and you guys voted in the last meal prep video that you wanted to see a summer version so that is what's happening this week I have lots of fun fresh colorful flavors and dishes for you guys to make this week and I can't wait to share it with you guys so let's hop right in and I will show you guys what's on the menu for this week's meal prep for breakfast this week I wanted to do something really light and refreshing and hydrating and I thought I would make my pineapple green dream smoothie this is one of my favorites actually haven't made it in a while but it's so refreshing perfect for summer with the pineapple and banana flavors and it's so easy to make to make this movie you're going to need a blender in your blender you want to add in your liquid first I usually do a mixture of half water and half nut milk or some non-dairy milk in this case I use coconut milk and then you're going to add in the rest of the ingredients I have baby spinach pineapple cucumber banana a couple ice cubes and a heaping tablespoon of hemp hearts for proteins you're going to blend that all up until smooth and then you're left with the creamiest dreamiest green smoothie that any picky eater would love and then to prep these for the entire week you can either take some freezer bags or mason jars and fill them up with all the ingredients put the lid on place them in the freezer or fridge and then you can just have them throughout the week all you have to do is dump add your liquid to your blender and you have a delicious green smoothie I'm going to have a sip right now honestly guys if you've never had a green smoothie this is the perfect one to kind of get you started and then you're just going to be wanting to add all the greens in your smoothies oh my god so good mmm it's like a pina colada okay Cheers that's breakfast next up we have lunch now for lunch I thought I would do something really easy to bring to work but that's also refreshing so we're making a rainbow salad in a jar and I haven't made one of these in a very long time but they're so convenient and such a fun way to get your salad in even when you're on the go first thing you want to do is get your sweet potato roasting in the oven because that's going to take the longest and you want it to fully cool before you add it into your mason jars peel and cube your sweet potato and then just put it on a parchment lined cookie tray throw on a little bit of avocado oil some seasoning I just used a garlic and herb blend some garlic powder and sea salt and pepper give it a good rub with your hands and then pop it into the oven to roast at 400 Fahrenheit for about 30 to 45 minutes making sure to toss halfway through once that's out of the oven let it cool completely now the important thing to remember with the mason jar salad is that you actually need to layer the ingredients in the right order so they don't get soggy in the fridge while they're waiting for you to eat them so to do that you want to first start with your dressing at the bottom you can also have your dressing in a side container if you know you're not going to get to your salad within the next few days but if you want to prep it with the dressing in this jar this is how you do it in a small mason jar I just mixed together some Dijon mustard honey apple cider vinegar olive oil and seasoned it with salt and pepper give that a good shake and you have a super easy creamy honey Dijon mustard dressing add in your cooked quinoa chopped carrot chopped red cabbage red onion cherry tomatoes corn roasted sweet potatoes then top it off with a big handful of mixed greens throw on the lid and pop it into the fridge for about 3 to 5 days until you're ready for lunch now for snack time which is basically the best time of the day we are making my oatmeal raisin energy bytes these guys are so delicious they're convenient to take with you on the go and I usually will just snack on a couple of them during the mid-afternoon when I need a snack and a good source of protein and carbs so to make these energy bites you're going to need a food processor you're going to process together some rolled oats raw walnuts cinnamon and sea salt just process it for about 15 to 30 seconds then that in some unsweetened shredded coconut give it a quick process again and then you can transfer this into a large mixing bowl to add in the liquids add in your nut butter the recipe calls for almond butter but I only had peanut butter on hand so that's what I use add in your sweetener I used maple syrup but you can use agave you can use honey whatever you like that has that stickiness to it give it a really good mix with your spatula or you can even get in there with your hands once it's mixed up you can add in a good helping of some raisins my favorite raisins are Tompson raisins I think they're smaller I don't like the taste of them better and they're not as like juicy and chewy and they work really good in this recipe then all I have to do is roll them up into little sized energy bites I like to use a 1 and 1/2 tablespoon ice-cream scoop for this it makes it really easy and then they're all the same size put it on a parchment lined cookie sheet or tray pop it into the fridge to fully cool and then they'll harden because of the nut butter and you have delicious little energy bites to have all week long mmm so go some other snacks you can have is just some fresh fruit I have some red grapes here grapes are in season right now you can get them at Costco and they're just a really fun tree to snack on you can even throw them in the freezer if it's a really hot day and just snack on them like little frozen grape trees so for dinner I'm going to whip up a batch of my salmon burgers and I made these guys a few weeks ago on my channel they're so good they're so easy to web apps they're made in one easy Bowl they take about three to five minutes on each side to fry and you can even do them on the barbecue if you'd like with some foil on the bottom and I'm going to show you guys a different way to enjoy them if you don't want to do them in a traditional bun you could also roll them up in a collard green wrap which I'm going to show you guys how to do in just a sec now to make your salmon burgers you're going to need a bowl and you're going to mix up all the ingredients together I added two cans of cooked salmon and I broke it up with a fork I then added some breadcrumbs eggs all my seasoning some lemon juice minced garlic and onion give it a really good stir until it all comes together and then just get a frying pan on medium heat for about five patties with the mixture and then cook them for about three or five minutes on each side until they're nice and crispy and golden brown and cooked all the way through so for today's spread I'm actually making this delicious and flavorful sweet pea hemp and mince tip this is actually from joyous health my friend joy just launched her eczema healing ebook and this ebook is honestly amazing for anyone dealing with eczema or I feel like any skin not any skin issue but a lot of skin issues or disorders because it's really about healing your body from within and eating a lot of healing foods and this was one of the recipes recommended and let me tell you it's freaking delicious a combination of sweet peace with the mint and the heads and the lemon juice is so amazing and very garlicky too delicious perfect for your summer meal prep or just like bringing to a barbecue or something I highly recommend this and I'm just going to like it's so good I've even gifted a copy to my older sister Pam because her and her two kids my niece and nephew all deal with eczema and what's really helpful for them is eating the right foods it's made the biggest difference so highly recommend checking the e-book out you haven't till June 30th to purchase there I believe the link will be down below and it's amazing definitely check it out to make the sweet pea hemp dip you're going to need a food processor in that you're going to add your peas garlic fresh mint leaves lots of lemon juice olive oil and a good helping of sea salt have hearts blend it up until nice and smooth I had to stop mine a couple of times just like scrape down the edges I have to add a touch bit more of olive oil just to get mine going just hang in there and you will end up with a delicious creamy pea dip so now we're going to assemble the route now when you're using a colored green it's really important to either shave down the thicker part of the stem or cut a little triangle that way it's really easy to roll up otherwise it's going to like crack and break and it's going to get messy next take a big tablespoon of the sweet peahens dip spread it all over the middle of your colored green I cut the salmon burger in half to make it easier to roll and then I added some of my leftover cooked quinoa that I used in the rainbow salad jars and then I just topped it with a little bit of the red cabbage for color and I rolled it all up as best as I could you can either just stick a toothpick in it you can roll it up with saran wrap you can store it in a container in the fridge until you're ready to eat best thing about the collared wraps is they don't get soggy as if you were to do it with a tortilla wrap mmm and then I just paired this with a simple side salad of some mixed greens that I usually get from Costco I threw on some cherry tomatoes and cucumber and you can really add whatever you want to it you could throw on some pumpkin seeds and then for dressing you can really just use the honey dijon one or have tons of healthy salad dressings that i will link down below that would be really really good with this as well alright guys that's going to be it for because who wants to come home after work and be slaving over the stove when it's a gorgeous day out if you guys make your meals on a Sunday then you don't have to worry you can come home quickly eat   20. For those who are looking to avoid oil, I learned from another YouTuber that a slurry (cornstarch mixed with water) can give the same body to salad dressings that oil can. I have tried it and it works like a dream. It's one way to avoid those empty calories. Win! ๐Ÿ™‚
