Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let's see how to make lunch box recipes for school. 5 different recipes. 5 recipes for 5 days. Most important thing is you can make preparation of all these recipes previous night. Next day, just saute or roast or fry. That depends on you. These are such simple recipes. Make a night before & store in freeze. Next morning make it & pack for kids' tiffin. Another special thing about These recipes. The tiffin box that I have used in these recipes that is made from stainless steel. But that tiffin belongs to my father. He used to carry that tiffin for office. I have used same tiffin for these recipes. As I searched on line, in market. But to be honest I didn't get steel tiffin boxes as I wanted. So I used that tiffin. Yes, there is attachment, it's close to my heart as it belongs to my father. Used to carry in office & used in recipe too. I hope you also will like it. Very 1st quick recipe. If some rice is left over or you can cook a little more rice purposly, Using that rice let's make see how to make paneer pulao. Very easy & simple recipe. To begin with heat up 2 tsp oil in a pan. When oil s enough hot add 1/2 tsp cumin seeds & let it splutter. Of cpurse then only tadka becomes khamang. When cumin seeds splutter add finely chopped onion & mix well. Fry until onion turns light golden. When onion is fried add finely chopped tomato. Green peas & mix well. Cook for about 2-3 minutes. When tomato & peas are cooked add paneer cubes & mix well. Fry for another 2-3 minutes. Add cooked, separated rice. Add 1 tsp pav bhaji masala, 1/2-1 tsp bedgi mirchi powder. Why bedgi mirchi powder? It gives nice color. That recipe doesn't look dull. Also it doesn't taste too hot. Kids don't eat tikhat food. To reduce the proportion of tikhat but it should get nice color too. So use bedgi mirchi. It is not compulsory to use Madhuras recipes' bedgi mirchi. Use the one that you have. Add salt to taste. Mix everything well together. Fry until it is well combined. When it is well combined add lot of finely chopped corinader leaves Mix once again. In this way you can make hot, nice paneer pulao in just 5 minutes. This is a little different aloo paratha. Main thing is you can knead the dough previous night & store it in freeze. If it is not too hot weather then you can store it on room temperature. What to do to make this aloo paratha is Take 1 boiled, peeled potato & grate it. Add 1 cup wheat flour, 1 tsp garam masala, 1 tsp coriander powder, turmeric powder, 1/4 tsp ajwain, 1/4 tsp cumin seeds, salt to taste, red chili powder to taste depending on taste of your kids. 1/2-1 cup finely chopped spinach & lemon juice. if you don't want to add lemon juice then you can add 1 tsp curd. But it needs to add sourness if you are using spinach. As spinach contains iron & to get it absorb in body it requires a little acidity. Mix everything well together. Mix the flour & spices in the moisture from potato. Add a little water at a time to knead semisoft dough. Neither too stiff nor too soft. Spread 2-3 tsp oil so that upper crust doesn't dry out. Take a small ball from it to make paratha. Divide that flour. You can make 3-4 parathe from it. Dip that ball in dry flour & roll a chapati or paratha from it. The edges of this get some cracks. What to do to make it even? Take a zakan of steel daba having sharp edges, place it on paratha, Cut the edges as we cut of karanji. You can keep it as it is if you like. But I did as it looks good. Remove the edges. Heat up a pan. Transfer rolled paratha on it. Roast until lower side gets brownish spots. Flip over & roast until it turns brown form other side. Spread a little oil on upper side & flip over again. Roast until it becomes nice, khamang, kharpus from other side too. Roast paratha well until it becomes nice, kharous from both sides. Fold it & serve in tiffin. Do not pack hot paratha in tiffin. Let it cool down a little on cooling rack & then pack it. If you pack hot paratha then it may catch up moisture. You can serve with favorite chutney or sauce. As we have added all spices no need of chutney. Next recipe is just awesome. It is very healthy & quick too. You can make batter for this previous night. That recipe is mix flour ghavan. To make this ghavan take 2 tsp jawar flour in a bowl. Add 2 tsp nachani flour. You also can add bajra flour if you want. Add 2 tsp wheat flour, 2 tsp rice flour, 1 tsp besan, 1 tsp fine or coarse rava, 1 tsp coriander powder, Turmeric powder, 1/4 tsp cumin seeds, 1/4 tsp ajwain, salt to taste, red chili powder & mix everything well together. After mixing dry ingredients, masale well add a little water at a time to make batter. Consistency of batter should be like ghavane batter. A little runny. SO that when we make ghavane these get nice net & these become kharpus. So make a little runny batter. After making batter add shredded carrot, finely chopped spinach. As spinach is added of course lemon juice or curd. Do add it. Mix everything well together. Cover & rest it for about 10-15 minutes. You can make it previous night. If you are making in the morning Then give it about 10-15 minutes of resting time. Heat up a pan. Spread 1/2 tsp oil. Start making ghavan always along the edges of pan. Start adding batter along the edge of the pan. Central part is more hot. Middle part is roasted kharpus & edges remain raw. So while making any ghavan try to start making ghavan along edges. Add a layer along the edge first and then at the center. Cover and roast for about 2-4 minutes. Remove the lid & roast until lower side is roasted kharpus. Flip over & roast kharpus from other side too. Fold it & let it cool down a little on cooling rack. Then you can serve in tiffin. This dhirde becomes nice, crispy & khamang. Not only for kids but also good recipe for elders too. You can all this as diet recipe. Healthy recipe. Make it for kids' tiffin And make it for yourself too. Do try it. Next recipe is chili veg sandwich. Kids must be given a treat at least a day. So a type of sandwich. One favorite recipes for them. It is nice & different. It tastes just awesome. Kids will have veggies because of this sandwich. For making chili veg sandwich heat up 1 tsp oil in a pan. Add 4-5 finely chopped garlic cloves & fry for about a minute. Add sliced onion, Sliced capsicum & fry for about a minute. Do not overcook the veggies. Add shredded cabbage, shredded carrot, 1/4-1/2 tsp soya sauce, 1 tsp tomato sauce & salt to taste. Add a little less salt as sauces contain salt. If you add more salt then veggies will taste salty. So add a little less salt. Mix everything well together & fry for about a minute. Stuffing is ready. You can keep stuffing ready previous night. Or keep the veggies ready. If you are not comfortable in giving stale food in kids' tiffin. Then you can cut veggies previous night Next day fry them quickly, make sandwich & give. For making sandwich take 2 bread slices. Spread mayonnaise on both slices on inner side. Not on both sides. Add a layer of this nice chili veg, put a cheese slice on it & close it. Add butter in a pan & put this sandwich on it. Roast until it becomes kharpus. Spread butter on opper side of bread. Flip the sandwich over without spilling veggies. It is important. Roast well from lower side until kharpus. You can cut & see the nice layers. Cheese layer, veggies layer. Serve in tiffin when cools down a little. Veg cutlet. I make this in a very different way. It looks like regular cutlet but these cutlet become khamang, crispy & crunchy. Do try these. Rainy seasin is on. If you are bored of having bhaji, vada then do try these cutlets. For tiffin, yourself, for all. TO begin with Take 1/4 cup pohe. 1/4 cup or 1/2 cup how much you want. Wash pohe really good. Just wash them, cover & keep aside. Don't soak pohe. Take potato & mash it well. Add grated carrot, finely chopped capsicum, finely chopped coriander leaves, 2-3 grated garlic cloves, 1/2-1 tsp mixed herbs, chili flakes to taste, salt to taste, washed pohe. Crush pohe & potato well with hand. Mix well. Add lemon juice & 2-3 tsp corn flour. Adding corn flour is necessary. So that cutlets don't dissolve while frying in oil. Gets nice binding. These become nice & crisy too. Add corn flour & mix well. You can keep this ready previous night. Even you can make patties & store in freeze. Next moring, just fry & give. Or if you want to make fresh them make it in the morning. Make small balls from the cutlet dough. You can give any shape you want. I have made these as regular cutlets, rolled them & flattened a little. You can shallow fry, deep fry or make appe. There are endless options. I am shallow frying in oil. I am shallow frying from both sides until khamang & khusakhushit. You can serve in tiffin. With chutney, sauce whatever your kid likes. You can pack a favotite fruit too, dry fruits. For a change you can give chips for a day. Just for a day & not daily. Chips should not be store bought. You can pack home made recipe too. These are nice 5 tiffin recipes for 5 days for kids. Not specific for kids. Elders also can have these recipes with that happiness. If you are bored of having same pohe, upma, idly, dosa, Then you can have these healthy recipes for your brekafast.
